i found this recipe and am posting as a follow up to

  1. Rinse the preserved lemons
  2. Remove and discard pulp
  3. Cut rind into thin strips
  4. Whisk together lemon juice and the next 5 ingredients
  5. Adding lemon rind
  6. Tomato and the next 5 ingredients
  7. Toss well and chill for 1 hour
  8. Serve over greens
