  1. Divide fish into 4 equal pieces if necessary
  2. In shallow bowl
  3. Combine flour
  4. Lemon rind
  5. Thyme
  6. Salt and pepper
  7. Dip fish into lemon juice
  8. Dredge in flour mixture
  9. Turning to coat
  10. In nonstick skillet
  11. Heat oil over medium-high heat
  12. Cook fish
  13. Turning once
  14. For 6 to 8 minutes or until flakes easily when tested with fork
