lemon thyme bars


modified from a recipe in the penzeys one magazine, it derives a distinctive flavor with spices not normally seen in lemon bars. these are even better the second day.

  1. Preheat oven to 350
  2. Combine all the crust ingredients in a bowl
  3. Cut in the butter until the mixture is coarse and lumpy
  4. Set aside about 1 cup of the crust mixture
  5. Pat the remaining crust mixture into a greased 9x13 baking pan
  6. Bake 15-20 minutes until golden
  7. Remove from oven
  8. But leave the oven on
  9. Prepare the filling: combine the dry ingredients in a medium bowl
  10. In a separate bowl whisk together the zest
  11. Lemon juice and eggs
  12. Whisk the wet and dry together until well blended
  13. Pour the filling over the warm crust
  14. Sprinkle the remaining crust mixture over the top and bake for 25 minutes
  15. Let cool
  16. Prepare the glaze by mixing the lemon juice
  17. Zest and powdered sugar until smooth
  18. Drizzle over the bars
