  1. Preheat oven to 180c or 160c fan
  2. Grease a 22cm pie dish
  3. Line prepared dish with pastry
  4. Trim edges
  5. Using scraps to patch any short sides
  6. Chill for 15 minutes
  7. Line pastry with baking paper and fill with rice or pastry weights
  8. Blind bake for 15 minutes
  9. Remove paper and weights and bake for another 5 minutes
  10. Cool in pan
  11. Mix together eggs
  12. Sugar
  13. Juice and rind and cream
  14. Pour into prepared tart shell
  15. Bake for 30-35 minutes
  16. Until just set
  17. But still a little wobbly
  18. Cool in pan
  19. Dust tart with icing sugar
  20. Serve in wedges topped with thick cream
