very delectible muffins with a lemony taste and a wonderful streusel to give it a slight sweet taste atop. wonderful with your morning or mid-morning or anytime coffe or tea. and when no one's looking ...a snack!

Steps

  1. Preheat the oven to 400
  2. Grease or paper line medium sized muffin cups or mini- cups
  3. In a small bowl
  4. Combine flour
  5. Baking powder
  6. Baking soda
  7. Sugar
  8. And salt
  9. Mix well
  10. In a large bowl
  11. Combine yogurt
  12. Oil
  13. Lemon zest and the eggs
  14. Mix well
  15. Add dry ingredients but stir only until it is moistened
  16. Gently fold in the fruit
  17. Fill prepared muffin tin three-fourths full with batter
  18. Topping: combine sugar
  19. Flour and butter and mix until crumbly
  20. Sprinkle this over the batter
  21. Bake for 12 to 13 min
  22. For mini muffins and 20 min
  23. For medium sized muffins
  24. Cool for 5 min
  25. Then remove them from their pans variation for the muffins: eliminate the fruit and add 14 c
  26. Popy seeds or 1 c
  27. Finely chopped pecans
