authentic mexican pork chile verde

  1. Pre-heat oven to 500 degrees
  2. In a small bowl mix the salt
  3. Chili powder
  4. Oregano
  5. Granulated garlic
  6. And cumin
  7. Coat the pork on all sides with the rub
  8. Massaging the spices into the meat
  9. Let the pork sit at room temperature for 20 to 30 before browning
  10. In a food processor or blender
  11. Pure the tomatillos
  12. Canned chiles
  13. Garlic
  14. Onion
  15. Oregano
  16. And beer
  17. Brown the roast on a roasting pan for 30 minutes in the oven
  18. Remove the pork from the oven and reduce temperature to 250 degrees
  19. Place the pork in a 13x9-inch heavy-duty disposable drip pan
  20. Pour the tomatillo mixture around the pork so it comes up the sides of the pork by 1 inch or so
  21. Seal the pan tightly with foil
  22. And place the pan in the center of the oven
  23. Cook the pork until the internal temperature of the meat reaches 190f and the meat is so tender that it tears easily with a fork
  24. 2 1 / 2 to 3 1 / 2 hours
  25. When the pork is fully cooked
  26. Carefully remove the pan from the oven
  27. Unwrap the pork and transfer it to a cutting board
  28. Chop the pork into 1 / 2-inch chunks and shreds
  29. Discarding any large pieces of fat or tough pieces of meat
  30. Pour the pan liquid into a large saucepan and spoon off most of the surface fat
  31. Add the shredded meat and simmer the mixture uncovered for a few minutes to blend the flavors
  32. Season with the cilantro
  33. Tabasco
  34. As well as salt and pepper to taste
  35. The chile verde may be made up to this point 1 day ahead of serving and refrigerated overnight
  36. Warm the chile verde over a slow simmer before serving
  37. Serve the chile verde warm in bowls with steamed rice
  38. Pass the sour cream
  39. Limes wedges
  40. And a bottle of tabasco
