  1. Preheat oven to 325f spray a 1-1 / 2 quart souffle dish with nonstick cooking spray
  2. In a large saucepan
  3. Melt the butter over medium heat
  4. Add the onion and saute for 5 minutes or until soft
  5. Stir in the flour
  6. Salt and pepper and cook for 2 minutes or until bubbly
  7. Add the milk and cook
  8. Stirring constantly
  9. For 5 minutes or until the sauce thickens
  10. Add the cheese and stir until melted
  11. In a small bowl
  12. Whisk the egg substitute
  13. Whisk in a little of the hot cheese sauce
  14. Then return this egg mixture to the saucepan and whisk until well blended
  15. Remove from the heat and fold in the drained asparagus
  16. In a medium-sized bowl
  17. Using an electric mixer set on high
  18. Beat the egg whites until stiff peaks form
  19. Fold the hot cheese sauce into the whites
  20. Then spoon into the souffle dish
  21. Place the souffle on a baking sheet and bake for 50 mintues or until golden brown and puffy
