Pan-fried Baltic herring fillets Baltic herring is a small fish, living only in Baltic sea. It looks a bit like sprat but really it’s just a species of herring. I usually don’t buy fillets from shop; they tend to be try, standing there in the air. I like to use fresh fish and fillet them by myself. Fillets are seasoned with bit of sea-salt and freshly grinded white pepper; soaked in egg-milk mixture (at least the eggs are from home farm in Raplamaa) and then covered with wheat flour. Then the fish is fried in butter. The sauce is simple sauce from butter, wheat flour, bit of milk and mayonnaise, flavored simply with salt and white pepper. Served with boiled potatoes and fresh salad with greens and canned peas.

Wonderful evening at Endas place! The food was amazing, and she told us very interesting stories about Talinn, Estonia and Estonian food. I would love to come again and eat her delicious fish! Thanks Enda!
