Khao Soi is a creamy Thai coconut curry with egg noodles, garnished with deep-fried noodles, shallots, roasted chili oil, and pickled mustard greens. It’s a famous dish in northern Thailand. We've all been positing photos of our dishes on Facebook, and everyone's so impressed because we were able to make such an amazing dish. Chef Rachel was so calm and clear in her instructions, and she was so kind and patient with all of us. Our group were pretty much all novices, but we made the most DELICOUS dish together! I devoured mine before I even cleaned my kitchen from class - it was THAT GOOD. I highly recommend Chef Rachel and this class!!
